Cajun Beef & Veg Rice

It’s a Winter warmer packed with flavour and protein.
Add this to your repertoire to bring a smile to your dial on those super chilly nights.

 

NUTRITIONAL INFO PER SERVE (SERVES 3)
503 kcal | 13g Fats | 55g Carbs | 40g Protein (GF)

 

INGREDIENTS
• 1 tbsp. coconut oil
• 3 large carrots, sliced
• 1 yellow capsicum, sliced
• 1 red capsicum, sliced
• 4 spring onions, thinly sliced
• 500g lean beef mince
• 2 tsp. Cajun seasoning
• 1 tbsp. tomato puree
• 500g cooked rice

 

STEP BY STEP
1) Heat the oil in a large pan over medium heat.
2️) Add the carrots, capsicum and white parts of the spring onions. Sauté for 10 minutes until the vegetables start to soften.
3️) Add in the minced beef, season with salt and pepper and cook for 10 minutes, until the meat is browned.
4️) Add the Cajun seasoning and tomato puree then stir well.
5️) Add in the cooked rice along with 4 tbsp of water. Stir well to combine all of the ingredients and heat for about 3-4 minutes
6️) Sprinkle with the green parts of the spring onion and serve.
