Savoury Beef and Lentil Stew

Enjoy this hearty and nutritious Savoury Beef and Lentil Stew, perfect for those cold winter evenings. Packed with over 28g of protein per serving, this one-pot meal is not only high in protein but also rich in fiber and essential nutrients. Easy to prepare and clean up, it’s a comforting dish that will warm you up and keep you satisfied.

INGREDIENTS LIST
  • 700g beef stew meat, cut into bite-sized pieces
  • 2 tsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, chopped
  • 1 large potato, peeled and diced
  • 1 litre beef broth
  • 1 can (410g) diced tomatoes, undrained
  • 1 cup lentils, rinsed (green or brown)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper to taste

 

STEP BY STEP
  1. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
  2. Add the onion, garlic, carrots, celery, and potato to the pot. Cook for about 5 minutes until the vegetables start to soften.
  3. Stir in the lentils, beef broth, diced tomatoes, thyme, rosemary, paprika, bay leaf, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lentils and vegetables are tender.
  5. Remove the bay leaf before serving.
