INGREDIENTS LIST
- 700g beef stew meat, cut into bite-sized pieces
- 2 tsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, chopped
- 1 large potato, peeled and diced
- 1 litre beef broth
- 1 can (410g) diced tomatoes, undrained
- 1 cup lentils, rinsed (green or brown)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- 1 bay leaf
- Salt and pepper to taste
STEP BY STEP
- Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
- Add the onion, garlic, carrots, celery, and potato to the pot. Cook for about 5 minutes until the vegetables start to soften.
- Stir in the lentils, beef broth, diced tomatoes, thyme, rosemary, paprika, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lentils and vegetables are tender.
- Remove the bay leaf before serving.
