INGREDIENTS

400g firm tofu, cubed

2 tablespoons vegetable oil

2 cloves garlic, minced

1 tablespoon ginger, minced

2 green onions, chopped

2 tablespoons Sichuan peppercorns, crushed

2 tablespoons fermented black beans, rinsed and minced

1/4 cup spicy bean sauce

1 cup vegetable broth

1 tablespoon soy sauce

1 teaspoon sugar

1 teaspoon sesame oil
-
2 teaspoons cornstarch mixed with 2 tablespoons water

Cooked rice, for serving

Chopped green onions and coriander, for garnish
STEP BY STEP
1) Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic, ginger, and chopped green onions. Stir-fry for about 1 minute until fragrant.
2) Add crushed Sichuan peppercorns and minced fermented black beans. Stir-fry for another 1-2 minutes.
3) Stir in the spicy bean sauce and cook for 1 minute.
4) Add cubed tofu to the skillet and carefully toss to coat the tofu with the sauce. Pour in vegetable broth, soy sauce, and sugar. Bring to a simmer and let it cook for about 5 minutes. Stir in the sesame oil.
5) Gently stir in the cornstarch mixture and cook until the sauce thickens, about 1-2 minutes.
6) Remove from heat and serve hot with cooked rice. Garnish this delicious tofu dish with chopped green onions and coriander.
