We love a good burger. And the holiday period is as good as any to whip yourself up a juicy Turkey Burger with on-the-spot prepared chutney.
The burger itself is low in calories and packed with protein. Depending on your dietary wants and needs this can be served with a leafy green salad, a fresh and tangy coleslaw, or a delish helping of sweet potato fries.

INGREDIENTS
- 450g turkey mince
- 1 egg, beaten
- handful of flat-leaf parsley finely chopped
- 1 tsp garlic granules
- ½ lemon, zested
- 4 small vine tomatoes, finely chopped
- 1 bay leaf
- 1 small red onion, finely chopped
- 2 tbsp red wine vinegar
- 2 tbsp soft light brown sugar
- 4 wholemeal buns, split
- 4 tbsp low fat mayonnaise
- large handful of shredded Iceberg lettuce
- 1 med tomato, sliced
- 1/2 small red onion, sliced
STEP BY STEP
1) Put the chutney ingredients in a pan and simmer over a medium heat, stirring regularly for 25-30 minutes or until the tomatoes have broken down and the mixture has thickened and looks jammy. Remove from the heat, cool and season well.
3) Toast the cut sides of the buns under the grill or in a dry frying pan. Spread with the mayonnaise, then sandwich with the lettuce, tomato and onion slices, burger patties and tomato chutney. Serve your Turkey Burger with a mixed salad, coleslaw or sweet potato wedges.
