INGREDIENTS
1 ½ cups granola
2 tablespoons melted coconut oil
1 ½ cups Greek yogurt
2 tablespoons honey or maple syrup
1 banana, sliced
½ cup strawberries, sliced
½ cup blueberries
STEP BY STEP
- Preheat the oven to 350°F (175°C).
- Pulse the granola in a food processor until roughly chopped.
- Mix the granola with melted coconut oil until it resembles clumpy sand.
- Press the granola mixture into the bottom and up the sides of a tart pan.
- Bake the crust for 10 minutes, then leave in the tart pan and let it cool completely.
- In a bowl, whisk together Greek yoghurt and honey (or maple syrup) until smooth.
- Spread the yoghurt mixture evenly over the cooled granola crust.
- Arrange the sliced banana, strawberries, and blueberries on top of the yogurt.
- Chill the tart in the refrigerator for at least 1 hour before serving.
