- 1 large carrot, shredded
- 2 tablespoons soy sauce (low-sodium)
- 1 tablespoon oyster sauce
- 1 teaspoon ginger, minced
- 1/2 teaspoon chili flakes (optional, for some heat)
- 1/4 cup fresh parsley, chopped
- 1 tablespoon olive oil
- 12 large lettuce leaves (like butter lettuce or iceberg)
STEP BY STEP
- Prepare the dipping sauce: In a small bowl, combine the soy sauce, rice vinegar, honey, sesame oil, and chili flakes. Stir to mix well. Set aside.
- Cook the filling: Heat the olive oil in a large skillet or wok over medium-high heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until translucent.
- Cooking the mince: Add the turkey mince to the skillet and break it up with a spatula. Cook for about 5-7 minutes, until browned.
- Add the vegetables: Stir in the chopped button mushrooms and shredded carrot. Cook for another 3-4 minutes until the vegetables are tender.
- Add the sauces and spices: Pour in the soy sauce and oyster sauce, and add the minced ginger and chili flakes if using. Stir well and cook for another 2-3 minutes to let the flavors meld.
- Add the parsley: Once the filling is fully cooked, turn off the heat and stir in the chopped parsley.
- Assemble the lettuce cups: To serve, place a heaping spoonful of the turkey mixture into each lettuce leaf. Arrange the lettuce cups on a serving platter and serve with the dipping sauce.
