Tasty Turkey Mince Lettuce Cups

These turkey mince lettuce cups are a delicious and healthy dish that’s perfect for a light dinner or lunch. The combination of lean turkey mince with vegetables and fresh herbs creates a flavorful filling, while the lettuce leaves act as a low-carb alternative to traditional wraps. Serve with a dipping sauce for an extra burst of flavor.

INGREDIENTS
  • 500g lean turkey mince
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 200g button mushrooms, chopped
  • 1 large carrot, shredded
  • 2 tablespoons soy sauce (low-sodium)
  • 1 tablespoon oyster sauce
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon chili flakes (optional, for some heat)
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 12 large lettuce leaves (like butter lettuce or iceberg)

STEP BY STEP
  1. Prepare the dipping sauce: In a small bowl, combine the soy sauce, rice vinegar, honey, sesame oil, and chili flakes. Stir to mix well. Set aside.
  2. Cook the filling: Heat the olive oil in a large skillet or wok over medium-high heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until translucent.
  3. Cooking the mince: Add the turkey mince to the skillet and break it up with a spatula. Cook for about 5-7 minutes, until browned.
  4. Add the vegetables: Stir in the chopped button mushrooms and shredded carrot. Cook for another 3-4 minutes until the vegetables are tender.
  5. Add the sauces and spices: Pour in the soy sauce and oyster sauce, and add the minced ginger and chili flakes if using. Stir well and cook for another 2-3 minutes to let the flavors meld.
  6. Add the parsley: Once the filling is fully cooked, turn off the heat and stir in the chopped parsley.
  7. Assemble the lettuce cups: To serve, place a heaping spoonful of the turkey mixture into each lettuce leaf. Arrange the lettuce cups on a serving platter and serve with the dipping sauce.
